烏頭酸酶(Aconitase)是三羧酸循環(tricarboxylic acid cycle)中的一種酶，它催化檸檬酸(citric acid)轉化為異檸檬酸(isocitrate)。檸檬酸(Citric acid)本身不易被氧化。在烏頭酸酶(aconitase)的作用下，羥基(hydroxyl group)通過脫水加水反應從β碳原子(β carbon atom)轉移到α碳原子(α carbon atom)上，生成易脫氧的異檸檬酸(isocitric acid)，用於進一步的氧化脫羧反應(decarboxylation)製備。absorption at 340 nm.
