澱粉水解酶(Starch hydrolases)，包括α-澱粉酶（α -amylase, α-Al，EC 3.2.1.1）和β-澱粉酶（β -amylase, β-Al）。 α-澱粉酶(α -amylase)隨機催化澱粉中的α-1,4-糖苷鍵(α-1, 4-glycosidic bond)水解(hydrolysis)生成葡萄糖(glucose)、麥芽糖(maltose)、糊精(dextrin)等還原糖(reducing sugars)，同時降低澱粉(starch)的粘度(viscosity)，故又稱液化酶(liquefaction enzyme)。CheKine™ α-澱粉酶活性比色測定試劑盒(CheKine™ α-Amylase Activity Colorimetric Assay Kit, KTB1370) 為檢測 α-澱粉酶活性(α-Amylase Activity)提供了方便的工具。其原理是澱粉水解酶(starch hydrolase)催化澱粉水解生成還原糖(reducing sugar)，還原3, 5-二硝基水楊酸(3, 5-dinitrosalicylic acid)生成棕紅色物質，在540 nm處有吸收峰。通過測量 540 nm 處的吸光度增加率來計算澱粉酶活性(Amylase activity)。

Applications notes	CheKine™ α-Amylase Activity Colorimetric Assay Kit provides a convenient tool for detection of α-Amylase Activity. The principle is that starch hydrolase catalyzes the hydrolysis of starch to produce reducing sugar, which reduces 3, 5-dinitrosalicylic acid to produce brown-red substance with an absorption peak at 540 nm. Amylase activity was calculated by measuring the absorbance increase rate at 540 nm.

Background	Starch hydrolases, including α -amylase (α -Al, EC 3.2.1.1) and β -amylase (β -Al). α -amylase randomly catalyzes the hydrolysis of α-1, 4-glycosidic bond in starch to generate glucose, maltose, maltose, dextrin and other reducing sugars, while reducing the viscosity of starch, so it is also called liquefaction enzyme.
