多酚氧化酶（Polyphenol Oxidase , PPO）廣泛存在於動物、植物、微生物(microorganisms)和培養細胞(cultured cells)中。作為一種含銅氧化酶(copper-containing oxidase)，PPO可以通過氧化一元酚 (oxidizing monohydric phenols)和二元酚 (dihydric phenols) 產生醌 (quinones)而引起褐變(browning)。這種酶還與果蔬加工(fruit and vegetable processing)、茶葉品質(tea quality)和組織培養(tissue culture)密切相關。PPO多酚氧化酶試劑盒為檢測血清(serum)、血漿(plasma)、組織(tissues)、細胞(cells)、植物(plants)和細菌(bacteria)等多種生物樣品中的 PPO 活性提供了一種簡單的方法。在該測定中，多酚氧化酶（PPO）催化兒茶酚生成醌，其在525 nm處具有特徵吸收峰(absorption peak)。在 525 nm 處醌的增加率可以反映 PPO 的活性。

Applications notes	The kit provides a simple method for detecting PPO activity in a variety of biological samples such as serum, plasma, tissues, cells, plants and bacteria. In the assay, Polyphenol Oxidase (PPO) catalyzes catechol to generate quinone which has a characteristic absorption peak at 525 nm. The rate of quinone increase at 525 nm can reflect PPO activity.

Usage notes	• Do not mix or substitute reagents or materials from other kit lots or vendors. • The sample preparation must be done on ice to prevent the enzyme inactivation, and the enzyme activity should be determined on the same day. avoid repeated freeze-thaw. • Ensure all reagents and equipment are at the appropriate temperature before starting the assay. • The optimal reaction temperature of polyphenol oxidase for different samples is slightly different, and it can be adjusted between 25-37℃.
