Tannase,全稱是Tannin Acyl Hydrolase(Tannin Acyl Hydrolase丹寧酶,EC 3.1.1.20)。單寧酶(Tannase)存在於富含單寧的植物(tannin-rich plants)中,也廣泛存在於微生物(microorganisms)中。鞣酸酶(Tannase hydrolyses)水解沒食子酸單寧(gallic acid tannins)中的酯鍵(ester bonds)和縮合鍵(depside bonds),釋放沒食子酸(gallic acid)和葡萄糖(glucose)。該酶可以由黑曲霉(Aspergillus Niger)、米曲霉(Aspergillus oryzae)等黴菌產生。可用於處理啤酒中的單寧和蛋白質,使其清澈透明。還可用於去除柿子等產品的澀味。也可用於泡製速溶茶,防止發酵茶渾濁。

CheKine™ β-澱粉酶活性比色測定試劑盒(CheKine™ β-Amylase Activity Colorimetric Assay Kit, KTB1380) 為檢測 β-澱粉酶活性(β-Amylase Activity)提供了方便的工具。其原理是澱粉酶(amylase)催化澱粉(starch)水解生成還原糖(reducing sugar),還原3, 5-二硝基水楊酸(3, 5-dinitrosalicylic acid)生成棕紅色物質,在540 nm處有吸收峰。通過測量 540 nm 處的吸光度增加率來計算澱粉酶活性(Amylase activity)。
