轉化酶(Invertase)，也稱為蔗糖酶( sucrase)或β-呋喃果糖苷酶( β -fructofuranosidase)，通過切割其糖苷鍵( glycosidic bond)並形成葡萄糖(glucose )和果糖( fructose)各一個分子來催化蔗糖的水解。根據最適pH，轉化酶( invertase)分為酸性轉化酶（acid invertase, AI）和中性轉化酶（neutral invertase, NI）。酸性轉化酶（acid invertase, AI）主要存在於細胞液泡或游離空間中，最適pH為4.5～5.0。 酸性轉化酶（acid invertase, AI）通過液泡中蔗糖的降解來調節液泡中糖的利用和果實中糖的積累。 酸性轉化酶（acid invertase, AI）水解蔗糖生成還原糖。還原糖還原3,5-二硝基水楊酸生成紅棕色物質。在 540 nm 處測量的顏色強度與樣品中的酶活性成正比。
