澱粉酶(AMYLASE) 屬於糖苷水解酶家族(glycoside hydrolase enzymes)，透過作用於 α-1,4-糖苷鍵( α-1,4- glycosidic bonds)將澱粉分解為葡萄糖分子(glucose molecules)。 α-澱粉酶 (EC 3.2.1.1) 在澱粉鏈(starch chain)上的隨機位置裂解，最終從直鏈澱粉和支鏈澱粉產生麥芽三糖(maltotriose)和麥芽糖(maltose)、葡萄糖(glucose)和「極限糊精」。在哺乳動物中，α-澱粉酶(α-amylase )是主要的消化酵素。人類酵素水平升高與唾液損傷(salivary trauma)、唾液腺( salivary glands)發炎引起的腮腺炎(mumps)、胰臟炎(pancreatitis)和腎衰竭(renal failure)有關。
澱粉酶測定試劑盒原理: 用於測量澱粉酶活性的簡單、直接和自動化的程序是非常理想的。澱粉酶測定方法包括兩個步驟：
