2,2-\u4e8c\u82ef\u57fa-1-\u4e09\u785d\u57fa\u82ef\u80bc\uff09\u662f\u4e00\u7a2e\u7a69\u5b9a\u7684\u81ea\u7531\u57fa( free radical )\uff0c\u53ef\u7528\u65bc\u6e2c\u91cf\u6297\u6c27\u5316\u5291(antioxidants)\u7684\u81ea\u7531\u57fa\u6e05\u9664\u6d3b\u6027(radical scavenging activity )\u3002 DPPH\u4e2d\u6c2e\u539f\u5b50\u7684\u5947\u6578\u96fb\u5b50\u901a\u904e\u63a5\u6536\u4f86\u81ea\u6297\u6c27\u5316\u5291\u7684\u6c2b\u539f\u5b50\u88ab\u9084\u539f\u6210\u76f8\u61c9\u7684\u80bc\u3002 DPPH \u65b9\u6cd5\u53ef\u7528\u65bc\u6c34\u6027(aqueous )\u548c\u975e\u6975\u6027\u6709\u6a5f\u6eb6\u5291(nonpolar organic solvents )\uff0c\u53ef\u7528\u65bc\u6aa2\u6e2c\u89aa\u6c34\u6027(hydrophilic)\u548c\u89aa\u8102\u6027\u6297\u6c27\u5316\u5291(lipophilic antioxidants)\u3002DPPH \u7531\u65bc\u5176\u5947\u6578\u96fb\u5b50\u800c\u5728 517 nm \u8655\u986f\u793a\u51fa\u5f37\u5438\u6536\u5e36(strong absorption band )\uff0c\u6eb6\u6db2\u5448\u6df1\u7d2b\u8272(deep violet
